Yao Choy

What is yao choy? Is it yao-choy or yaochoy? Well, it depends on what language you speak and where you are. In Chinese, yaocai is a leafy vegetable that comes from a flowering plant within the cruciferous family. The edible leaves are used in many Chinese or asian recipes such as stir-frys, soups, and even salads. The plants grow either point upward or spread out on the ground. It has white stalks and green leaves with yellowish stripes, hence its name Yao Choy which means “white vegetable” in Chinese. In Chinese cooking, Yao Choy is sliced into thin strips and stir-fried with garlic and other vegetables.

Yacon

Yacon is a root vegetable and quite a tasty one at that. It contains inulin, a sweet carbohydrate that is part of the fructan family.
